Black Chicken With Buttered Rice

This is an interesting combo I should insist everyone to try at least once!!


Honestly Im a very lazy girl!~! 
I need to be pushed for everything. At times my mom hates when I show too much of my works in the kitchen and take over the whole area. And at times I'am so lazy that i'll be dragging myself to walk towards kitchen, that is moment when she will be telling me 10 times cook something for ur bro, cook something guests are coming cook cook cook hehe. It will look as if the laziest devil inside me is sitting and enjoying the anger of provoking devil inside my mom
I dont know how many will laugh reading this or imagine the same on what we do with our mum's haha this is the kind of strange relationship I share with my mom. 

Such was the time when I took the chance to prepare black chicken which was sitting in my to try recipes folder. It hardly took 10mins to cook wow :P this is such a life saving recipe for those lazy days, which we all face :D 

Recipe Source: Forgotten!! This was spl recipe of authors mom made with chicken drumstick!!

Black Chicken:
Ingredients:
Boneless Chicken - 300gms
Soy Sauce - 1 and half tbsp
Vinigar - 1 and half tbsp
Garam Masala - 2tsp
Ginger Garlic paste - 1tbsp
Chilli powder - 1tsp
Salt as required
Oil - 1tsp - 2tsp

Method:
- Excluding oil, Marinate all the above listed ingredients for minimum of 30 mins. 
- Heat oil in a pan and add the marinated chicken. Stir cook this for 2 mins in medium high flame. It will start oozing out all its juices.
- Add 1tbsp water and close the lid of the pan. Allow it to cook for 5 mins minimum in low heat.
- Open the lid, increase the flame to high keep stirring till all the masala coats up well with the chicken and extra water dries up. this process is also called bhoonna in hindi which has been clubbed with english and called bhoonifying  This take another 2 mins and you are done!!
- Serve it hot with Hot Rice, Pilaf, Roti, Paratha or just eat it as it is  It is deliciously different!!



Notes:
- You can make the same using chicken with bones. In that case, prick the chicken pieces using fork before marination, so that all the sauces and spices reaches the inside. 
- Cooking time will also vary for chicken with bones. say extra 5-10 mins than what boneless can take.
- Do not add more oil. I added more oil by mistake and also used non stick pan. It felt fine while cooking but when I dished it out, I found all the excess oil drained downwards. So for sure this can be counted under diet recipe 
- You can also make a saucy black chicken!! Im going to try this next and update soon on how the saucy ones can go like.... 

My Reviews Towards this new dish!!
It was excellent tasted too different!! I was expecting sourness but it turned out to be spicy and flavorful. I was surprised on how nicely the extra oil drained off, which normally does not happen if you know. I took pleasure of polish off few pieces just like that, you can call it addictive if you are craving to have something spicy make this and treat urself!!
If you know my brother is a picky eater he can give 100 reasons for not liking a particular food, When I asked him how how he liked?
he responded "It was good"
I recollected it tasted so much like bhoona chicken of Vahchef. I said my bro you worked hard to make vahchef's bhoona chicken and I did it with just few ingredients and less cooking time too :P
Ok we R gud siblings we do not debate or argue for little things hehe


Buttered Rice:
I used A bowl full of left over rice which was kept in fridge over night.
In a karai/ wok add 1-2 tbsp of salted butter. throw in the rice, little salt and pepper, toss it in medium heat till everything gets mixed nicely. Serve it hot!!

This went too gud with black chicken and both these things can be prepared alternatively consuming time of just 10-15 mins.

Jammy French Toast

Nothing can be prepare so quickly and easily, yet be so filling and delicious!! Yes All my votes go to french toast!!!

Preparing french toast is versatile, be easy in making it, with any kinds of variations you like. Serving it is again so easy!! I dont need anything else to compliment it with. I can gulp down french toast just like that. 

Suddenly when I was about to make french toast yesterday I thought of applying jam as filling and try out with 2 bread slices just for myself

And as usual when I try a new food with each bite I start feeling and describing it in my own mind which I will be raving about in the end of the recipe. Next thing I knew was, I should not miss blogging about this recipe. 

Preparation Time- 2 mins 
Cooking Time - 2 mins 
Serving - For 1 person

Ingredients:
Sandwich Bread slices - 2 
Egg 1
Sugar - 3 fat pinch
Salt - 2 fat pinch 
A dash of cinnamon Powder (optional)
Milk - 1 tbsp
Jam - Any flavor ( I used mixed fruit)
Oil / butter to cook

All these ingredients will be readily available in your pantry for sure.

Method
- Applying jam in bread slices each. Either fold each bread slice / keep both slice together (jam filling side of bread facing each other) make a triangle or square cut as you wish. Keep this ready
- In a fry pan add little of oil or butter as you like and allow it to heat in low flame. 
- Mean while whisk up egg, salt, sugar, cinnamon & milk 
- Dip each jam filled slices of bread into the egg and toast it in medium heat. Flip the bread to other side and allow it to cook till both the sides are golden brown. 
- Remove it from the pan and you are all done!!
- Serve Hot / Warm 


Notes:
- Make sure you just Dip the bread into the bread and quickly place it into the cooking pan, Dont allow it to soak up.
- In case the bread has soaked more eggs you will know it easily. While cooking the bread will start bulging up from the center. In such case you make sure, you cook it for more time in low flame so that inside of the bread which has absorbed extra eggs get cooked well.
- Applying jam just to moderation according to your sweet tooth would be best.
- Any jam would go best along with this recipe!! Will try next with pineapple jam :)


My Ravings After Eating This:
- It is highly kids friendly
Any fussy kid who refuses to eat eggs can be ditched easily with this preparation!! When we eat, the smell of cooked eggs are not noticeable at all. Flavors of jam dominates and the whole combo feels really different.
- Busy moms can take pleasure to serve this as morning breakfast / to pack lunch for their kids. 
- Can be served as healthy evening snacks for kids 
- Why only kids should have all yumms?? :P Yes we can take privilege to enjoy with them as well.

How To Make Instant Mava | Khoya

Making Of Khoya or Mava is very tedious process It consumes lots of energy and time, and lovely end result too!!

But in who has that much of time and energy to spend? specially if you intend to make it at home fresh!!

I was browsing through a facebook group called sikandalous Cuisine and found this useful post by Radha Natarajan S. I immediately asked her If she can allow me to post it over my blog. She was sweet enough to permit me to publish her post in my blog!!


This proportion will yield 200gms of khoya aprox
It can be kept in fridge for 10 days

Hope this post is useful to all my readers as it is super quick to prepare and use for any Indian Sweets!!

Instant Kadhi Hyderabadi Style

 Instant Kadhi Or Call It Cold Kadhi Is No Cook Recipe and can be prepared Within 5mins



Waahhh Im Flattered Over The Pic!! This is again a Lovely Guest Post By Uma Aunty! Again She dosent need an introduction at all. Her Previous Guest Post Masoor Dal Pulao With Masala Curd And Masala Papad Is unforgettable! Such a Lovely Spread It was!!

Uma Aunty had Inbox me a month back asking if I can feature Another recipe of her's. Really Glad she did Its Welcome Humbly From Anyone Who thinks my space is worth featuring their articles :)  With pics of what Uma aunty puts up in her fb we can notice such wonderful presentation! I hardly ever took that much time for making presentation! So its all in one treat to get her here!!

Getting back to the recipe Its very simple 

Ingredients
Curd / yogurt - 1 bowl
Little Water
Turneric powder - 1 pinch
Salt - As needed

To Grind
Garlic - 8
Green chillies - 6
Cumin seeds - 1 tsp
Coriander leaves - 2tbsp
Water - as needed

For Tempering
Oil - 1tsp
Cumin seeds - 1tsp
Mustard seeds - 1tsp
Dry Red Chillies - 2
Curry Leaves - Few
Coriander Leaves - Few to garnish

Method:
- Grind the items under the list to grind using little water to fine paste
- Add this paste into curd and whisk well, add little more water to form a thick kadhi consistency.
- Add Salt and turmeric accordingly. And Remove In a bowl

To Temper:
- In a pan add oil , once heated add mustard seeds, followed by cumin seeds, dry chillies and curry leaves.
- Pour this tempering into the bowl of curd with spices And serve it Cold in room temp as it is.
- Ready To Serve With Rice And Roti



Notes:
- Do not Boil The Curd
- Keep the consistency thick
- It keeps well for 2 days in refrigerator

White Khichdi

White Khichdi is a spl preparation which I dont think has been featured anywhere


What makes it special is that, there is nothing special I gotta explain about its existence. Till now What I know is it has been originated from remote villages of Orrisa! In a way call it poor man's food during those days, I cant date back sorry :) Of course when people used to do their own harvesting and had some of their own ways to make preparation with what ever little they could afford!!

There are few such foods which was staple even when my parents were growing up, I have talked about Sweet Tangy Poha Delight earlier where I had mentioned a little story behind its existence, and there are few more quicky recipes I would love to share with all :)

Recipe source comes from my mom, I always enjoyed these food since my childhood but wasnt bothered to learn these remote authentic food until I started blogging and keep an eye on what she does ;) also keep firing lots of questions to her. 

Coming back to the recipe this is very simple and I opted to post this today as this dish is really perfect for lazy days and great time saver for working mom's. Im  too lazy with this chilling weather today and thought will make a quick type out and finish my post quickly :) But one can imagine If my laziness is so much lengthy then what my posts will be like when im active lolz!!!

Ingredients:
Rice - 2 cups soaked in water (any variety will do)
1 coconut Grated.
Lots of water
Bottle gourd - 2-3cups cubed (optional Check notes)
Salt to taste

Method:
- In a pressure cooker, add drained rice, bottle gourd Enough water and salt. 
- Close the lid and Pressure cook for 2 whistle. Let the pressure drop


This is how it will look.

- Now add more water and mix well to obtain khichdi consistency when still hot, once it cools down mixing and diluting will need muscles in our arms :D

- Add coconut and check for salt, cook it again for 5 mins till the whole thing gets blended perfectly. And you are done!



Serve is hot or in room temp With any spicy Veg / NonVeg side dish! 
I like it hot :)

Notes:
- Bottle gourd is optional. You can make the khichdi with rice alone, But if you add bottle gourd it will give a little difference when u eat. 
- I cannot give measurement of water, as rice is starchy, as we cook it will keep absorbing the water. And also when it thickens after we cool down, we can add water and dilute it while reheating. Add a little salt to balance the taste.
- Even If it comes to room temp the quality of food taste will not change.
- We can also make this in normal pot without cooker, But cooking time may exceed as we keep boiling and it obtains the consistency, using cooker is time saving option
- Dont skip coconut as it compliments this khichdi to larger extent.



Wanna Have a Spoon??? It goes well along with anything you like. 

If you have extra left over by chance, you can keep it in fridge, and next day add curd and sugar to it, and have another yummy treat!! (All of us love the leftover version also)



Impression:
In other words I can say this is much simpler version of pongal/ other khichdis with no daals, oil, spices or tempering, It tastes bland and unique full of energy and simple to ur tummy!!

Protein Rich Soya Snacker

Yummy Healthy Spicy and Juicy Thats what I can say for this Healthy Snacks cant believe? Read out the Recipe Its the best snacks for dieters!! Low in Calories Best in Taste 



I never like making soya chunks as it gives an odd pungent smell which is so much displeasing to my taste buds as well as my nostrils :P yess I get a headache which I come across smell of strong odour food! Raw smell of Soya, Tomato, Channa Dal, Potatoes comes in the list 1st.  

Well what I had to do 1st is to learn how to eradicate the bad odur from this Protein Rich Soya chunks. But mean while I came across a recipe online named Soya 65 It was very interesting to me and I wanted to try out immediately as I had soya in handy. 
Now the thing which happened was I did a mistake and the end result become soggy! Thats where this recipe was invented ;)

No wonder mistakes are the reason to create a new recipe :D I think Many of u should agree to this part of mine! Specially If u believe not in wasting any food which can be recreated.

Ingredients:

Soya / Meal Maker - 1 cup Any size
Ginger Garlic paste - 1tsp heaped
Chilli powder - 1/2 tsp
Cumin Powder 1/2 tsp
Coriander Powder 1 tsp
Tandoori Masala - 1tsp
Garam Masala - 1/2 tsp
Salt to taste
Curd - 2 tablespoon
Coriander Leaves - 2 tablespoon
Tomato sauce - 1 tablespoon
Oil - 1 tablespoon

All these things will be there in your pantry so you dont have to get any special ingredients for the recipe sake!!


Method:

- Take 2-3 glasses of water in a pan and boil the soya chunks till it get double in size, add more water if needed!! Also add salt at this boiling point. 
- Leave it to rest till the soya double in size and temp of water drops!!
- Squeeze the soya nicely and wash it in clean water once again!! if u like again squeeze all excess water and remove it in a bowl
- Now add all the dry spices, ginger garlic paste,  salt and curd mix it well!! allow it to marinate for minimum 15 mins and maximum till what ever time your ready to use!!
- In a non stick pan Add oil and put in this marinated soya mixture and cook for 3-5 mins till the raw smell of the mixture goes of in medium heat!! 
- Once this is done add tomato ketchup and coriander leaves and toss it well
- There you got!! your Healthy Yummy Snacks is Ready!!




This is a delicious Guilt free snack For all age groups Filling and Healthy!
Serve it Hot / in Room temp Choice is Yours!!


Notes:
- While cooking if u feel its getting burnt, add some water to it to avoid burning of masalas
- You can add more spices according to your taste.
- Since I use it as snacks Im using mild spices If u have intension to make it as a side dish, recreate the recipe by adding onion tempering and more spice level to make it as a side dish!! I will try this way and update u guys :D
- You can mix and match the spices as u like, but one thing for sure the taste wont disappoint you!!
- If the soya chunks are too big you may chop down to biteable size after it becomes soft and then proceed with cooking
- The same thing if u add some cornflour / maida to the mixture add some red color and deep fry it, it will become soya fry or soya 65 ;) 
- Since this is a shallow fry method! Isnt it healthy?


Serving Suggestions!!
You may sprinkle lemon juice and mix it well before serving!
Also serve with rings of raw onions!! 

Impression:
These Soya Chunks May Look Dry from Outside But Completely Yummy and Juicy From Inside!! 
When we bite all the spicy tangy juice oozes out giving it a unique taste!! 
A guilt free snack and best substitute for Vegetarians and Non- Vegetarians As Well :)

TANDOORI FRENCH TOAST


A unique flavored french toast!! Dont look like tandoori though but flavors of tandoori are fused in... Call it Indian style or my  personal inventory It is quiet detectable In taste and different than normal french toast flavor. In my previous posts of french toast I spoke about coming up with varieties of french toast and here is another one I present to you all.


I truely got fed up with daily deep fried goodies though I have pics of my daily cooking I dont have much time to sit and type my long stories as usual, Its almost 15 days Ive posted very less and short simple recipes only. And when I make something interesting I cant stop posting it the same day :)

I simply said mom no fried today pls, mom asked then what? I recalled a pack of bread lying around and said french toast? She nodded Ok!! Though I had planned to make something little different but the final twist came around when I started Adding Masala's

Ingredients

12 - 14 Bread Slices (Cut into 2 each)


Egg Mixture:

Eggs - 5
Chilli Powder 1/3rd tsp
Cumin Powder 1/2 tsp heaped
Coriander powder 1/3rd tsp
Ginger Garlic Paste - 1tsp
Tandoori Masala - 1 to 2 tsp
Curd - 2 tsp
If curd not available add 1-2 tsp of lemon juice
Milk- 2 tablespoon
Salt to taste
Coriander leaves chopped- 2 tablespoons
Salt 2 fat pinch
Oil to shallow fry


Method

- Mix in everything under egg mixture and whisk it up nicely. Allow it to rest for sometime so that all the flavors get infused well.
- When your ready to cook and serve, just dip in the bread slices in to the egg mixture and shallow fry as you would do for normal french toast!!
- Flip the sides and cook in medium flame till well colored in both the sides
- Serve it hot with ketchup


Notes:

- Level of spices is according to my taste, Please adjust according to your family preference. But spice level should be more coz bread is a bland base where we are applying coating for. May be make one slice for yourself 1st and taste it on what more or less alteration you would like to make.
- Serve it hot, as this taste more flavorful when hot rather cold.
- In case you dont have tandoori masala use any other garam masala for a difference in taste. eg. chole masala, garam masala, chicken masala, curry masala :) Go wild with ur flavorings you wont disappoint yourself for sure
- I saw the coriander leaves hardly stick to the bread mixture when we do the coating, so when u place the bread slices in pan, with help of spoon or hand place the coriander leaves on top manually for a better impression 
- Also mix the whole mixture each time bfr dipping in the bread slices. As the masala particles tend to settle down.
- I dint wanted to add red food color to make it look tandoori if you wish feel free to add a thin pinch of food color and whisk it!!



Impression:

It tasted best when hot along with tomato ketchup. Everyone liked it too!! Adding of tandoori masala seem to be a gud idea for a different treat :)

Instant Rava Idli In 30 minutes

This was my 1st try and I fell in love with the results :)

My Dad is sick with stomach infection he had outside food few days back, beware dont just eat roadside food until hygiene is taken in account in that place. He is slowly recovering his health ofcourse high fever and loose motions making me all weak. We are busy simultaneously for Ramdhan and our timings have changed. What can be a better light food in sickness other than idlies? Being born in family coming down from North east India We eat more n more of Phulkas. Dosa batter is in the stock but idlies are very rare as Ive mentioned earlier in other post of my Rava idli. This version is very different than other recipe already posted. 

As my dad wanted to eat idly I made up my mind to make instant idlies, Though I had something else in my mind, I landed up making something else, but it turned out what exactly I had assumed a picture frame in my mind. 


I googled up some recipes but all of them had tempering added to the idli, I just wanted to KISS (Keep It Simple Stupid) lolz :P and I also had an idea to use eno fruit salt, which suddenly went missing, I was little disappointed at 1st then went with the basic method of using soda and it worked out well enough to make me all happy happy!!!!

So sharing my Simple Recipe with you

Time Taken - 30 mins
Yields - 16 idlies
Preparation Time - 2 mins
Fermenting Time - 15- 20 mins
Cooking Time - 8-10 mins
Level - Super Easy


Ingredients:

1 and half cup - Suji/ Rawa/ Semolina
Curd - 1/2 cup or less
Water little
Salt 1 tsp or more
Oil - 1 tsp (optional)
Soda bi carbonate - half of 1/4th tsp or 1 fat pinch

Method

- Wash and rinse Rawa for 3-4 times, so that the dusty starchy particles get removed and gives some whiteness to idly. This is what I learnt from my previous idly version.

- There will be some water remaining add curd to it, salt and soda bicarbonate. The batter should be in flowing consistency. In case its thick, add little water to adjust!!

- Let it rest for 15-20 mins it will be kind of short fermentation.

- After 20 mins set the idlies to steam in well greased mould and steam it for 8- 10 mins.

And Your Done!!! Remove it from mould once little cooled
and enjoy it warm, With side dishes







See the porous soft idly texture from inside :) 

When I tasted myself I couldnt believe It would taste so gud :)Whitness was lacking, idlies turned pale yellow kind. Rawa Idlies wont give much whiter result until urad daal is added along. otherwise Generally Rawa has its own starchy effect which gives a dull finish to any end product of it. At 1st i was tensed about the color but after eating it, what I felt was, why bother abt a pale finish?? when the result is excellent ;)

Only thing went missing for me with this delicious result was Sambar and coconut chutney :)


Impression:

When I 1st remove idly moulds from steamer I was skeptical but when my mom unmoulded and kept in a bowl, I saw it later and just said wow with a surprise. I couldnt resist to taste it and found it super soft in hands to break it with 3 fingers. And taste was more surprising I couldnt believe how I missed trying out these idlies before :) 

My mom 1st said it gives a kind of smell, I asked what? No I just had 1 its tastes good no smell at all, then she tasted and Helped herself with 2 more idlies and enjoyed it too :)

My brother came poked idly with his one finger found it soft enough, nodded his head and went as he is under bathini diet and still 10 more days to go he is eagerly dying to have normal foods lolz.

If you have less time to cook go for these im sure you will never be disappointed :)

CHICKPEA SALAD




Hey Guys Wats Up?? 
I've Been Away From Blogging For Sometime, Kept busy With my Family and Cousins and slowly im learning that though Im new To blogging and an enthu blogger as well but I also want to enjoy a quality time with my family :) Yes, Family Friends & Relatives always remind you of food, and trust me its food running in my mind all these days lolzz n also I dint forget to click for blogs :D

Though Im not the one who cooks a lot as complete meal for my Family these days. My cousins r staying at granny's place so my aunt is taking care of cooking & Alhamdulillah my mom's health is fine now so she is on her move to prepare most of the delicacy Im helper behind :D

There R many events going on which I check with updates when ever I have access to my pc, But for some reason like Family and own sake I've kept blogging at back seat for this month alone, yet dont know how the coming up months would move coz we start with Ramdhan Very next month and certainly Im preparing myself yet disturbed on how it might move (Various Reason). And so my stories will go on and on ..............

Lets Get back to the Recipe :)

Seriously yes!!! This is a very Healthy Salad, Which can be used as a Diet Meal. Snacks and yes also does satisfy your food carvings :)

We R used to make Sundal As all of us know, there r different ways to make it. But I came up Inventing this Recipe For the Sake of High Protein Diet. So here it goes 

Ingredients

Boiled Chickpea - 1 cup
Cabbage Roughly Chopped 1 cup
Onion Chopped - 1 medium / large size as you preffer
Cucumber 1 large, De seeded and chopped
Capsicum - 1 Medium size
Lemon Juice According to taste
Pepper powder as needed
Salt as required
Oil 1 tsp / Butter if u like

What the hell oil doing in a healthy Salad?
Well Just that I cannot stand the Smell and Taste of Raw Onion and Capsicum :) a little alternative to cook them a little and make it edible for me :)

Method:

- Take oil in a pan and put in Onion and capsicum, Cook it for aprox 1 or 2 mins in medium flame till raw smell of onion and capsicum goes but yet the veggies r firm but not soft.
- Add in chickpea and rest of the veggies, Toss well.
- Remove From pan, Add salt, pepper and Lemon Juice According to your preferences :)
You can trust my taste buds for this and Enjoy a Healthy Dish!!!




Notes:

- Do not over cook onion and capsicum if it turns soft you cannot enjoy this dish as a salad
- If you are tolerant to raw onion and capsicum then skip step 1 and proceed
- I removed the seeds from cucumber as I wanted only the crunch part in my salad.
- You can add in more veggies if you like, I used just basic veggies which was available at home.
- I also added more of lemon juice to it, which complimented well along with the entire thing
- I had used left over chickpea

Serves - 2 People as half meal/ 4-6 people as snacks / 1 person Like me can eat the whole plate of it :D




Impression:

The Whole thing is packed with crunchiness Soft Boiled chickpea Goes Well along with this Veggie Platter. Best Enjoyed When ur not in hurry to eat. The more slowly u eat the more you enjoy :).
