SWEET POTATO POHA

Healthy Carbs Is Healthy way to diet. Select ur Carbs and Do not Avoid It!!





I love Poha, Since the 1st I tasted in a educational trip from school. They were jains and I was a veggie for 15days along with them, I dint miss NV at all. Im so much comfortable with vegetarian foods And if one checks thru my blog Ive added very less NV recipes. Its not that we dont consume NV at home. My parents cannot eat until something NV is there as side dish. But me and my bro go ga ga with being vegetarian itself :D


Poha is nothing but Flatten rice or beaten rice. Very healthy and nutritious Packed full of carbohydrates and very filling as snacks or meals on the whole. If one is in diet ur dietician shall suggest avoid carbs but the fact is it isnt sensible to avoid carbs at all. So the point is when we consume carbs we should make sure we are not alternating it with much of fats. This turns the healthy carbs into fats our system fails to understand and there for puts it into fat deposition. 


For example Eating Potatoes is healthy carb. But the point is if u eat it boiled or roasted and consumed in form of salad's and spiced up chaats its very nutritious and filling. But the same if u fry and mix up with fats loaded food, then potato also becomes and ingredient to reserve fats to body. Simple because our system fails to understand what to absorb and puts the whole thing towards fat deposit.

Oh its just a little understanding towards misconception of carb. But honestly it is needed in a very healthy way in our daily diet :) So this poha is very rich in carb and nutritious too!!


The most important thing I learnt abt consuming carb is It helps in bowel moments. We often see people in diet complain abt constipation! Reason? - A diet low in carbs is also low in fiber and may lead to constipation so make sure cut carbs by reducing high sugar based product which gives empty carbs and calories. So dieters pls welcome Healthy Carbs in ur diet and stay Healthy


I was having some boiled sweet potato and tot of clubbing up with my normal so much liked savory poha!! 


Ingredients:


Flat / beaten rice - 1 cup
mustard seeds -1/2tsp
Green chillies - 2-3 chopped
Turmeric A fat pinch or more
Salt to taste
Few curry leaves (optional)
Peanuts 1tbsp
1 onion medium size chopped
Sweet Potato Boiled and Roughly Chopped One Cup
Oil 2-3 tsp
Coriander leaves to garnish


Method:


- Wash the poha / flatten rice In water for 2-3 times till all the particles remove be quick and light in hand to mix when washing. Drain the water and keep it aside in a bowl to rest for 10-15 mins maximum.
- Heat oil in a wok. Add mustard seeds Allow it to crackle 
- Lower down the flame to medium and add Chopped Onions green chillies, turmeric powder and peanuts, cook it for a minute or two till onion is little soft, peanuts little roasted. I prefer adding salt too at this point. 
- Once this is done add the boiled sweet potato and poha into the kadai and mix it well. 
- Check for salt and seasonings, Garnish it with coriander leaves.
- Serve hot or cold


Notes:

- In case ur including curry leaves add it at the  time u add onions
- Washing poha and allowing it to rest will result u giving fluffy soft poha's ready to eat.
- Peanuts add crunch and nutty flavor u may skip if u dont have
- Adding onion gives a difference of sweetness to the dish so dont omit until u have a reason not to consume onions 
- Spicing is done by green chillies, Add more if u want more spice
- Sweet potato Combines too well with the whole concept the creaminess of soft boiled potato is felt when eating this poha
- If u want to add more color to poha u may dilute turmeric in water and sprinkle from top and mix. But in my opinion color dosent matter Once it is prepared we find mild yellow color with nice green coriander leaves and chopped green chiliies. Peanuts also give enhancing multicolored look to the whole concept. 
- Do not cook much after adding poha, as it might dry out the moisture, and you may feel the dryness while eating. Let it remain soft. 
- If u have to reheat it, Sprinkle Some water from top and heat again to maintain moisture balance. 
- If u want to add in more salt u can sprinkle salted water and mix while cooking/ reheating.


Impression:

The Whole platter is Colorful nutritious and very inviting. Flavors of each ingredients stay intact, Blend in well while eating. Makes a gud lunch box for kids too :)

Mixed Veggie Bread Masala

What if ur hungry and want the most filling food with all nutrition put in, tasty yet simple.
Interested??? lets see ;) the most filling breakfast or Chatpata snacks!!



This is higly modified version of Masala bread I had seen from Inhouserecipes again!! I had seen the video and wanted to try this out!! Being a white bread lover I can consume it in any form and also as it is!! But clubbing it with something nutritional one can think only of sandwhich but this is something more like upma? I cant say exactly But Lets take a look at the recipe :)

Ingredients

Bread Slices - 5-6
One large Tomato (blend to puree/ finely chopped)
1 large onion
Green chilli - 2-3 slit
Curd - 2-3 tbsp (optional)
Red Chilli Powder 1/4th tsp (optional only when high spice level req)
Garam masala as per needed aprox 1/4th tsp or more
Salt
Mustard seeds 1/4th tsp
Cumin seeds 1/4th tsp
Mixed Veggies Roughly chopped as desired
1tbsp Oil

Method:

- Cut the bread slices into biteable size 



- Get all the veggies and ingredients Ready



- Heat oil in a pan and add mustard seeds Allow it to crackle add cumin seeds, tomatoes and cook till it gets mushy.
- Add in the onion slices and cook for a while Add in the other ingredients mentioned above except ( bread & coriander )and cook for 2-3 mins till veggies are half done!! 
- Add bread and mix it well add coriander from top Close the lid and allow it to cook in low flame so that the flavors get infused well.



I personally like to add a little pinch of sugar to this. 
- Stir in again and serve hot!!!


Notes:

- Use any veggie as u like but cook enough so that the crunchiness remains, thats what I meant by Half cooked veg.
- Adjust Salt according to taste.
- Curd is optional, but gives a different taste over all. If Vegan avoid curd and add lemon juice at the last.
- I add sugar to balance the taste  of tanginess.
- When at cooking stage bread pieces will be soft. So be careful while mixing, be light at hand when u do that.
- I had used capsicum, onion and sweetcorn, this combo was delightful!! I keep changing veggies variety as and what is available at the moment.
- Adding garam masala brings a nice flavor to the whole combo
- The veg mixture after cooked should have some liquid consistency to coat along with bread!! dry mixture wont give the infused flavor effect of bread pieces.
- you might omit red chilli powder n add pepper powder instead


Impression:Soft bread with Crunchy munchy onion and veggies to pop in and the flavors to tangy tomato and tempering all combine well!! My dad joins up to eat along with me!! My bro when he is in mood!! and my mom is sometimes in mood and sometimes no but she does taste a little.

Once I made this for Ramdhan Iftar Along with Chicken kheema my uncle and aunts tasted it and wanted more :P I was Quiet happy with the response to my creative version :)

Cottage Cheese Onion Flat Breads

In other words Paneer Onion Paratha, Simple delicious flat breads when you dont know what to do with little quantity of paneer or chenna with you :)



Many a times at home it happens that We R left with little milk which curdles because of unpaid attention, Humid climate plays a gud role during summer in curdling of milk need to be very careful after all milk is getting expensive day by day. To talk about 3-4 yrs back when we 1st shifted our house in 1999 we got located near a cow shed!! oh my what a stinky smell at times, And there next to it was Aavin milk depot just opposite to my house. We used to put money in a bag can shout to the aunty of the the shop. she would bring milk packets and take money also give back change. This was a pleasure thing to get milk so quickly and easily when ever needed how can one be so lucky lol!!! leave apart the cow shed smell It got better by time :) We used to consume lots of milk and milk product due to this convenience and biggest thing was IT WAS CHEAP!!! 7rs was blue pack, 8rs was green with little cream milk and Orange pack Full cream was Rs 9 - 10 dont really remember now. And now??? I cant think of wasting milk nor spilling, We shifted again 2yrs back and it became a little difficult to get access with milk but still dad makes sure to get more packs when needed!!!





Coming back to the recipe!!
So such cases with little amount of curdled milk serves nothing. Sometimes mom leaves it as it as and asks me to do what ever I feel like and there I am clueless on what to do until this idea of paratha came up to me

Level: Simple
Preparation Time - 10- 15 mins
Resting Time - Depends as you like
Cooking Time - 3 - 5 minutes each!!

I wanted to make onion paratha since long so I wanted to club up paneer with onion and check out how it turns. Ideal For Breakfast / Light Lunch / Tiffin Boxes / Dinner / Dawat too :)

Ingredients:

Whole Wheat Flour - 2-3 cups as needed
Onion - 1 Large or 2 medium size Roughly / Finely Chopped your wish
Green chillies - 3-4 finely chopped
Coriander Leaves - 1 tablespoon
Paneer / Chenna - 2-3 tablespoon (Thats it I Had)
Salt to taste
Water for Kneading as per needed
Oil  as per needed while cooking on Tava

Method:

- In a Large bowl take flour, chopped onion, coriander leaves, paneer, green chillies and salt. 
- Slowly mix in the whole ingredients using your hands and crumble it giving pressure to all the ingredients. This process is important and onion and paneer will have its own moisture. 
- Add water slowly and as needed and prepare Stiff yet soft dough. 
- Keep it to rest for sometime with closed lid to the container kept till your ready to use.
- Before using it, knead the dough again and divide it into medium balls and roll it using rolling pin in a flat board.
- Heat a skillet/ tawa and cook on both sides in medium flame adding little oil on both the sides till cooked and nice aroma is released. 
- Finish up with the whole dough and pile up for yummy treat.
- Serve Hot / Warm With and Kind of side dish as desired!! Also Pickles



Notes:

- Adjust the Spice level according to your taste. Its always gud to have a spicy version of paratha coz flat breads are usually bland to taste. Increase the amount of green chillies if desired
- Use butter Instead of Oil for Rich taste if you like.
- Coriander leaves are used for flavoring.
- While kneading no need to add oil for softness. As paneer will leave its own oil while kneading and give a wonderful finishing to the dough
- Adding extra water as we do normally for wheat flour dough to make it soft is not advisable here because Onion might tend to leave its own juices when kept for resting.
- Parathas might be crooked at sides ignore if ur using big chunks of onion. If you have finely chopped onions then parathas will be round and well finished
- You can also add nigella seeds / ajwain for flavoring also chopped ginger or garlic or Ginger garlic paste too. Depends on you. Lots of options are available Go by your mood and taste :)


I served this with Boondi Raita / Savory Raita It was just delicious :)

Impression:

Paneer had no taste ( thats a regular opinion of mine that paneer is bland with no taste ) But It helped paratha stay really soft
Little Crunchiness from onion was there. 
Green chillies gave spicy effect
Mild Flavoring from coriander was good enough
Over all It is a good treat worth to try again n again :)

Instant Rava Idli In 30 minutes

This was my 1st try and I fell in love with the results :)

My Dad is sick with stomach infection he had outside food few days back, beware dont just eat roadside food until hygiene is taken in account in that place. He is slowly recovering his health ofcourse high fever and loose motions making me all weak. We are busy simultaneously for Ramdhan and our timings have changed. What can be a better light food in sickness other than idlies? Being born in family coming down from North east India We eat more n more of Phulkas. Dosa batter is in the stock but idlies are very rare as Ive mentioned earlier in other post of my Rava idli. This version is very different than other recipe already posted. 

As my dad wanted to eat idly I made up my mind to make instant idlies, Though I had something else in my mind, I landed up making something else, but it turned out what exactly I had assumed a picture frame in my mind. 


I googled up some recipes but all of them had tempering added to the idli, I just wanted to KISS (Keep It Simple Stupid) lolz :P and I also had an idea to use eno fruit salt, which suddenly went missing, I was little disappointed at 1st then went with the basic method of using soda and it worked out well enough to make me all happy happy!!!!

So sharing my Simple Recipe with you

Time Taken - 30 mins
Yields - 16 idlies
Preparation Time - 2 mins
Fermenting Time - 15- 20 mins
Cooking Time - 8-10 mins
Level - Super Easy


Ingredients:

1 and half cup - Suji/ Rawa/ Semolina
Curd - 1/2 cup or less
Water little
Salt 1 tsp or more
Oil - 1 tsp (optional)
Soda bi carbonate - half of 1/4th tsp or 1 fat pinch

Method

- Wash and rinse Rawa for 3-4 times, so that the dusty starchy particles get removed and gives some whiteness to idly. This is what I learnt from my previous idly version.

- There will be some water remaining add curd to it, salt and soda bicarbonate. The batter should be in flowing consistency. In case its thick, add little water to adjust!!

- Let it rest for 15-20 mins it will be kind of short fermentation.

- After 20 mins set the idlies to steam in well greased mould and steam it for 8- 10 mins.

And Your Done!!! Remove it from mould once little cooled
and enjoy it warm, With side dishes







See the porous soft idly texture from inside :) 

When I tasted myself I couldnt believe It would taste so gud :)Whitness was lacking, idlies turned pale yellow kind. Rawa Idlies wont give much whiter result until urad daal is added along. otherwise Generally Rawa has its own starchy effect which gives a dull finish to any end product of it. At 1st i was tensed about the color but after eating it, what I felt was, why bother abt a pale finish?? when the result is excellent ;)

Only thing went missing for me with this delicious result was Sambar and coconut chutney :)


Impression:

When I 1st remove idly moulds from steamer I was skeptical but when my mom unmoulded and kept in a bowl, I saw it later and just said wow with a surprise. I couldnt resist to taste it and found it super soft in hands to break it with 3 fingers. And taste was more surprising I couldnt believe how I missed trying out these idlies before :) 

My mom 1st said it gives a kind of smell, I asked what? No I just had 1 its tastes good no smell at all, then she tasted and Helped herself with 2 more idlies and enjoyed it too :)

My brother came poked idly with his one finger found it soft enough, nodded his head and went as he is under bathini diet and still 10 more days to go he is eagerly dying to have normal foods lolz.

If you have less time to cook go for these im sure you will never be disappointed :)

Rava Idli




Rava Or Suji Also Well Known as Cream Of Rice Is Very nutritious and Really Great for Quicky Recipes!!!

But This Recipe isnt quicky needs aprox 12 hrs before We reach the final result. And its completely worth the wait.

We dont make much of idlys at home. No Particular Reason as we eat more of Phulkas and Dosa batter is always in stock for sure. Once I asked mom y no idly? she said the rice used is different and in our normal grinder it would be difficult to grind it. Thats when my hunt started for Rava Idly until I reached A post from Vahchef!! Hes my all time fav Im really inspired by him more than sanjeev kapoor or any other chefs we look around online. I couldn't wait to try and see the result myself!!!

This is how it goes :)

Ingredients 

Urad Daal - 1 cup
Rava / Suji - 2cups
Salt to taste
Cooking Soda- 1/4th tsp - 1/2 tsp 

Method:

- Soak Urad daal and Suji in water separate Bowls for 3-4hrs 
- But make sure you wash and rinse suji atleast 4-5 times in clean water before keeping it to soak for 3 hrs.
- Drain the urad daal water and suji water mix both the ingredients and grind it to fine paste, as of dosa batter. Use little water as needed, Dont make it too runny.
- Consistency of batter will be sticky kind. Thats perfect!!! mix in cooking soda and salt
- Pour the batter into a large bowl and leave for 6-8 hrs for fermentation. The batter will Rise to double its size, So make sure you use a large dish to set the batter.
- Once this is done your ready to make idlies :)
- Put the batter into idly moulds and steam it as you do for normal idlies

Your Yummy Soft Idlies are ready!!! Serve it with, Coconut Chutney and Sambar Yummm!!

Notes:

- Urad daal can be grinded separately and rised suji can be added as it is and kept for fermenting, But I prefer grinding suji n urad daal together because personally Suji when Cooked with something has tendency to fall into bits here n there when we bite. So I at 1st hand grinded suji as well to see how it turns, and my assumption went right!! Grinding suji was a gud decision though it was an experiment!!!
- Washing suji 4-5 times Removes the extra Starch and helps making white idlies. not washing suji will not harm the end result but may be you will get off white idlies
- Using soda is optional, Because If was making for 1st time I added soda as well, thinking what if it does not ferment? and idlies dont turn out well??
- After fermentation do not mix the batter, just scoop it out as it is into the moulds, Coz when we mix then it will break the air bubbles and idly will not turn porus and soft.
- You can also prepare dosa of this batter.




Impression:

Soft Idlies, Porus, as its seen in pic!! Does not break into tit bit pieces easily, can be handled well in masses, unlike idlies made with rice which tend to break easily when handled hardly.

So ultimately When I plan to makes these for next morning I Start up today evening around 6 or 7pm, Soaking takes 3-4hrs, then Grinding!! Time given for fermentation around from 10pm  in the night to morning 6am - 7am when ur fermentation is done and idly batter is ready to be cooked!!  I really hope this part is clear :)

Stays Gud for 6-8hrs after cooking. Can be kept in fridge and reused after giving another steam as fresh idlies, Or make other varieties as idly upma/ manchurian/ masala idly etc etc :) Choice goes Unlimited...............
