Royal Nutty Rose Milk

Rose is Something Which Attracts many people just by its Name, And when its with milk??? Yumm flavored and Healthy Drink Packed Together!! Some Indian Flavors Like Rose, Kesar, Badam Etc Gives a sense of Royalness in their taste so as this drink with a little of its intro playing its part at my home :)

I know its not new for many of us! But yet many still are not aware of this yummy drink!! My relatives who ever taste this have a question always on "how do u make this?" And my aunt who lives in orrisa,  her family is completely crazy, This drink is a must make when they visit us! Though its simple I still dint get why they arent able to make it themselves well gud for mom she is always in demand for many of her cooking skills ;)

Today Im sharing this fav drink of my family and clicked pictures today not because we had some guests or Im trying to beat Chennai Heat in Cool Winters which never enters Chennai lolz. But Since we are in the beginning Of New Islamic Year which is Called Muhrram my family and relatives have a ritual to make and chilled drink on 6th day and Recite Fatiha (Prayer) distribute the drink among Family Friends & Relatives and Also to Poor needy or the one very thirsty. I actually do not know the root of the reason why this is done but ok no Questions on something I dont know! When I tried to know from mom what drink our relatives make at Village? she says nothing I was almost shrugging my shoulders and asked her then why we do this? She said we had been doing since long, She dont have an answer and Im sure my relatives who follow it also dont know why they do certain things, Many muslims do this and many dont!! so lets not think and get on with this yummy drink :)

Serves - 4 - 5
Level - Very Easy

Ingredients:
Milk - 1 liter Full Cream
Water - 1cup
Sugar - 5- 6 tablespoon According To your taste
Rooh Afza - 2-3 tablespoon or any brand of Rose Syrup
Almonds - 1 tablespoon
Pistachio - 1 tablespoon

Method:
- Blanch and Slice Almonds and Pistachio in advance or you may do later too.
- Boil Milk & water in a pot and Add Sugar Less than Sweet Enough for your taste
- Boil the milk in low for 3-4 mins till the sugar melts into the milk and gets cooked for a while (this step is important)
- Cool down the milk and Add Rooh Afza mix it ( Add enough just to give rose flavor and light pink color) Also see notes!!
- Add in blanched and sliced nuts
- Chill it and Serve!!!

Enjoy the Drink by Crunching Nuts In Every Sip

Notes:
- Full Cream milk gives a richer taste. If you are diet conscious you can used skimmed milk too
-  Adding sugar to boiling milk and cooking for a min or 2 gives the whole thing a very rich taste. The density which we will obtain by doing this will increase the taste to a different level. But its optional!!
- If you already have chilled milk add in powdered sugar, as granulated sugar may not dissolve soon.
- You may proceed consuming the drink without nuts too but nuts give such a nice flavor in every sip we hardly can avoid.
- You may skip nuts and add soaked basil seeds this again is an amazing combo!!
- My relatives who sent their had added chorinji as well.
- The reason why I said to add sugar lesser than your sweet level was that when we add rose syrup it will have certain amount of sugar consistency and that will balance the taste.
- Light pink color is more appealing and gud to taste flavor wise compared to more rose syrup added which become dark pink and too much rosy and heavy in flavor.
- We always prefer Rooh afza when it comes to rose syrup as it gives the perfect taste of natural flavor which we are used to. We had tasted other brands rose syrup and essence such as Himalayas etc but never got  better taste out of it.  But still this should not become a reason for u to not try out this drink :)
- If you like you may add some rose petals while serving for the Real kind of royal look but I dont assume it much sensible as many people may not like to having rose petals Disturbing their drink, Specially when u have nuts along to munch

This is just a perfect Drink for all time and Occasions.
If you ask me to describe this drink in short?? I would just say
A Royal Treat!!!!
So What are you waiting for? Try out this Royal Nutty Drink Yourself and Know the Difference!!

Also do let me know how you liked it :)

FLOATING ICE APPLE IN MILKY PARADISE

We call It Tarkul!!! Tadgola (in Marathi) is called Ice-apple in English (lovely name), Nungu in Tamil, Tala in Oriya, Tari in Hindi, Taal in Bengali, Tale Hannu or Tateningu in Kannada, Pana Nanguin in Malayalam, Munjal in Urdu, Tadfali in Gujarati and Targula in Konkani.

This particular fruit is native to South Asia. The fruit is covered inside a thick shell, 2-3 fruit in Each!! Big Sharp Knife is used to remove this as it is so hard outside as tender coconut. Not much difference i'll explain below how :)

This pic above is best example which i took from google Tes At Home. Not much pictures are available about this fruit and I cant Click a original one as Im not in my village as well :) Ive seen there live in orrisa how they remove the whole fruit and its fun to peel out the soft fruit inside it :) After removing from shell we might find a yellow layer which is little bitter in taste. Ive seen some people eating as it is. But I love to peel of the skin and then consume it :)

This is how the peeled ones look like

Large shinning pearls kept inside a bowl :) thats wat I felt after seeing the pic

Mom & Dad make sure we have this treat every summer. This fruit is loved alot within my family more than mangoes :P   yea seriously!! Y not??? when we find so many issues in consuming mangoes this fruit works opposite to that. Its Summer Coolant to body. It helps from sun stroke and hydrates us from fatigue, Gives natural sugar vitamins and minerals needed for our body :)
I also read in google that its good for people sufferring from chickenpox it might help them reduce the number of days of suffering as it is a coolant to body.
It contains phosphorous n calcium also can reduce exceeding white discharge in women
No FATS or CARBOHYDRATES cans be found So All Dieters Go Go enjoy ur treat :)
It also cures stomach n skin disorder and is good for digestion in pregnant women facing constipation and acidity problem. Better than any juices which contain high calories. Google can Teach Me all :) and Im one of the Dedicated Student Google Can ever have :P lolz

Sorry mango Lovers Reading My Post!!!! But the above content is true :) something which mangoes cannot provide.

Coming back to the recipe
(Dont Forget To Read Notes) I certainly was thinking what to name it and just named it as the picture is presented here.
This one is my childhood fav mom used to make it and I was always greedy to have more n more y not?? Who wants to leave such yummy treat so quickly????

Boil Half Liter Full Fats Milk and sugar according to your taste to make it sweet enough and cook in low flame for 2-3 mins stirring it.
Cool It!.
Chop the above fruit roughly Add into the milk. Refrigerate  n Serve Chill Your Done :)

Surprise!!!!
This Dosent End here. When its nicely Chilled Imagine What u get??? The flavors of ice apple gets fused with milk and bring out a distinct flavor to the whole thing!!. Ice Apple Taste Like Sweet Tender Coconut and the taste of milk Is something I cant explain. Sometimes I get confused If I want More of Milk or these Floating Chunks :)

Presenting another Variation To this Dessert!!!
Chop up the fruit and Add in 3 tsp Of Rooh Afza Or Rose Syrup. Mix it well. You will get something like this

My Pinky Pearls :D Looks Cute Dosent It???
Now Mix This In prepared Boiled milk as mentioned above. And It will Look Like This

Rose Color has got mixed with milk Giving Out a pretty color to both.

Chill It and your ready to serve :)

Notes
- Make Sure u get fresh soft fruits for this. Harder ones Dont serve the purpose right they can be served as it is.
- Do not add these chunks into hot milk. I dont know what might be the result lolz as ive never done so.
- You might also want to grind it and see and then add into the milk as pure or small chopped chunks STOP!!! Bad idea we tried it once when I was small and the result was a thick paste which dint taste gud at all.
- If your trying the 2nd variation I would inform you 1st that i had used rooh afza and there was some smell of rooh afza coming. I did this to show another variation for blog :) You can make a try for sure :) the whole idea was to give lil coloring to these fruit chunks. Thats it!!! So you can use any food color if u like, But After adding to milk It might bleed into milk as well. Go ahead try urself!!!
- If u dont have milk ready With You You can always chop up the fruit and keep inside the fridge. once milk is boiled and cooled as mentioned above add in both and let it sit for at least 1 hr or 2 (it will help infusing flavors)
- I cant give exact measurement of fruit milk and sugar because Quantity of fruit depends on availability  Milk should right enough so that there is not too much of fruit nor milk. It should go hand in hand, so you can be careful while adding milk to the fruit. When u feel this much is enough then stop it. Point is The fruit chunks should float but also not so much like one here n one there :) My pics shows it well enough!!!
- Adding flavorings or Condensed milk would make the dessert loose its original Taste!!!
- Consume within 4-5 hrs or preparation. Keep it in fridge with good cooling temp until then,
More long its kept, It will start getting some kind of thick sticking consistency from the fruit.
- Serve it after Food as dessert Or Consume it as ur evening snacks Choice is yours!!!!

What ever might be the variation :) I always go with the 1st method mentioned in this post.
I always keep the milk ready and take pleasure to chop up this fruit over the milk itself, so that the juices fall right away into milk improving the taste of dessert.

Isnt it a wonderful Summer Chiller??? If u have this fruit why wait for :) Please Go ahead This Dessert is quiet Economical Too :)

Perfect Curd - Home Set

I just love dairy products from my childhood, Of course milk is the base for all and I let go milk, Having milk in various forms salt, sweet sour, solid forms anything I dont mind, Im a Happy Girl who likes to consume milk even after grown up big :D Point to be noted!! Many who know me call me a little girl still lolzz for sure all our elders treat us that way :)

Call it curd or call it yogurt its all one, but just a little difference on how each one likes to call it. To share with all of you setting curd I feel is an art which all of us should learn. Lolz too old a dialogue to say but trust me once you start setting curd at home, its difficult to like the store brought curd. Though store bought curd have its own thickness etc etc stays fresh long without being sour, but what if I tell u, you can set curd same as store brought? Yes you got me right for every word I spoke here. I have better reasoning to explain here how and why :) I just thought of taking little pain for this simple recipe and explain it in detail :D Its more Like 2 marks Answers asked for 10 marks and students dont know how to elaborate lolzz
Seriously this is Home Set Curd :)

Ingredients:
1/2 liter milk (full cream/skimmed)
2 tsp starter curd (always use fresh ones, which is not sour)

Method:

Boil the milk and let it become lukewarm.
Mean While keep the curd starter in a tea strainer hanging in a small bowl, so that all the whey/water from the starter curd drips down into the bowl.
Thick starter curd is set. make sure it is in normal room temp.

In a bigger bowl, take starter curd and whisk

Whisk Whisk Whisk Till you break down all the solid particles into soft cream as shown above :)

Into this pour the warm milk and whisk it again. Make sure milk is almost in dropping temp, other wise you might land up curdling milk :) (experienced it thinking milk is warm enough, but it had to be cooled more)

After whisking milk into starter curd you might find bubbles of air on top dosent mind makes no difference.
(Please check notes how to get rid from air bubbles and make it look like store brought one)

Transfer This into a clean plastic container or steel tiffin or a bowl, anything which suits you. I transfer it into plastic containers usually. But to show curd can be set in any vessel I kept the curd to set in same container in which I had whisked!!!

Now Partially close this vessel with a lid so that dust dont enter, and keep it to rest for 6-7 hrs in a place where no one can disturb it, somewhere u keep and forget!! yet u can see when you walk around :)

After 7 hrs just try to shake a little, if it gets shaken from center you need to give some more time for resting. If its well set it will not move/ leave its sides neither will the center shake. Sometimes we keep it over night when we set curd in the night and keep it back in the fridge in the morning when we wake up (We here is Me & Mom)

Once set close the lid and store in fridge use it when ever desired. Once we start scooping out the curd we can find after sometime water/ whey start releasing. That will not disturb the curd consistency, Its just the nature of the curd. I dont like to waste this water at times, I use up the whole thing.

A little background :
Initially when we tried setting curd it will all turn liquid and runny. but sourness remained that of curd. I was small then and also would frequently get disappointed. I saw my nani (mom's mom) set curd in huge vessel which was sitting there thick and awesome. since then I wanted to learn from her but never got a chance though, until I came across a Food Page in FB.

When I followed the steps I was not sure how it would turn, coz mom always told me to cool down the milk to room temp 1st then add starter. But when I saw the result I was so happy Running around showing everyone at home lolzzz. Of course why not???? its been something I was trying to achieve the result from my childhood. Since Then mom asks me to set curd. But still I do make mistakes :)

Masters of arts cannot make mistake and name it as a creative new art :)

Disasters and Reasoning's:

- Warm milk from top and hot from bottom, so make sure milk is warm to dropping temp otherwise it might tend to curdle if ur not sure abt warm milk after boiling, then let the temp of milk drop fully, and lightly heat the milk vessel  for 1/2 min the warmness which milk will get will be enough to make a start

- Use just 2 tsp - 3 tsp of starter curd. After letting the water drip from strainer. you might be left with only 1 and half tsp thick starter.

- Using thick starter is important as it will give thick consistency to the curd setting. while runny curd used as starter will give runny consistency.

- I never asked mom why keep lid partially open no idea though, she wont have reasoning's for my questions :P I never tried packing up the whole thing and let it to set, If anyone does that let me know how it turns

- Whisking is important as it breaks the solid particles from thick starter, Whisking is also important after adding milk because it allows a gud blend of starter and milk together. If u dont have egg hand whisk use a fork that will work fine. mixer might curdle the whole thing.

- Do not add lots of starter curd thinking It might set more thick. I happen to do this mistake recently and was unaware what goes wrong. When we add more starter curd the particles of curd instead of blending with milk start floating on top resulting a thick curd from top but there will be water formation from below. So the whole thing will be like Earth Land floating on top and Sea Water beneath lolz :P

This pic of the post was taken when I 1st set the curd which got the perfection :) This pic was taken 2 year back in 2011, I was always clicking pics to post in my Fb to show my frnds :) 1st pic also shows porus texture on top due to air bubbles formation during whisking!!

This pic is I tried making Boondi Raita for 1st time with the set curd. I never knew both these clicks would be helpful for my blogging in later years. :)
I wanted to post the last pic along Just to show the thickness of the curd, Its just stiff enough and not runny.

Any Doubts Or If I Had Missed Any Points Do Feel Free To Ask In Comments Section, OMG IF U REALIZED IM SMILING THROUGHOUT THE POST AND YES EVEN NOW. Is such a pleasure to share something like this :)

Open Ur Mouth Taste It AaaaannnnnN!!

Notes:
- Using Full Cream milk or Skimmed milk is your choice, Result will depend acordingly
- The amount of curd im shown in pic for whipping as starter is suitable for 2-3 liters of milk ( did for sake of showing here)
- To get rid of air bubbles I usually strain it in tea strainer or even steel strainer this makes ensure of even distribution of starter throughout, If any particles of starter is left in strainer dont be hesistant to add it back to milk.
- After straining atleast once use a spoon to stir, breaking any more left out air bubbles and then shift to a container pouring slowly, pouring it from a certain height will again form air bubbles.
- Sour Starter may Give Sour Curd even if lil sour makes a difference so always use fresh starter
- Keeps gud for 5-6 days in fridge with cooling temp!!

Plssss plsss plsss!! somebody give me full marks for writing such a big history with just 2 Ingredients HaHaHa!!

This Post might Look Big But To Do is Just 4-5 steps away!!!
